I can actually see Han accompanying/piloting Luke when he goes traipsing around the galaxy looking for Force-sensitive orphans. And then those orphans just start calling them 'Dad' and then it stuck. Like his aunt and uncle before him, Luke thinks of himself as their dad in every way possible, Han finds it adorable and they get a good dad/bad dad routine going on.
